The monks of Subiaco Abbey believe the secret to Abbey Brittle’s exceptional taste is the large amount of “Well-Blessed Peanuts” used in each batch, and the fact that the brittle is made slowly, one skillet at a time—not mass produced. They also add a generous measure of baking soda at the end of the cooking process to make it “fluff up,” resulting in a brittle that is both very light and easy to bite. While you won’t have to worry about chipping a tooth with this delicious candy, you may have to worry about where to hide it from those poor souls who have been cursed with an insatiable sweet tooth.
